  What I ate in a day!💫

⭐️️Breakfast: Overnight Oats Pancakes (will be on this week’s Foodie Friday) with Walnuts and Carmelly Date Sauce (scroll down here for the recipe!)

💛Snack: Fresh Peaches, Blackberries, Grapes, and Raspberries topped with Coconut Flakes.

⭐️Lunch: Sonoma “Chicken” Salad (the “chicken” is tofu!) from the Happy Herbivore‘s Light and Lean Cookbook.

💛Dinner: Lentil Joes from the Happy Herbivore‘s Light and Lean Cookbook, in a Whole Wheat Vegan Pita with Fresh Mango and Steamed Veggies.

⭐️Dessert: Skinny Vanilla Cupcake with Fluffy Buttercream Icing (from last week’s Recipe Review Thursday) and Fresh Raspberries.

💛Snack: HappyHealthyPopcorn with Salt!

  • 👍Plus, if you’re eating a Plant Based and Nutrient Dense Diet (that is free of refined sugar❌, processed foods❌, or unhealthy fats❌) then you don’t even have to count calories!
  • 💛It’s actually pretty easy to be healthy isn’t it?😊
