2 Ingredient Healthy Vegan Cookies (Quick and Easy!)

Yes, you read that correctly: TWO ingredient cookies!

The two ingredients are:

  • Oats
  • Bananas

They are SO yummy, and so deliciously healthy!  

I have added Enjoy Life Vegan Mini Chocolate Chips to some and they were SO GOOD!

I also made some with raisins and cinnamon.

You can add whatever you want, or eat them plain! 

You really can’t find a healthier or easier vegan cookie recipe than this!

Happy Healthy Vegan Chocolate Mug Cake

Recently, I found a delicious, healthy, Vegan Chocolate Mug Cake at Food Fiasco.

The real recipe is for a Vegan Chocolate Lava Cake, but I’m too lazy–so I skip the lava and make it a Chocolate Mug Cake!

Yes, you read that correctly, a mug cake

This deliciousness only takes a few minutes to make!

This cake tastes decadent, but it’s actually healthy!

I usually have this for dessert once a week–it’s just that good!

 

I made 3 changes to the recipe:

1. I used Whole Wheat Flour, instead of White While Wheat Flour.

2. Instead of sugar, I used Truvia Baking Blend.

3. Instead of Cocoa Powder I’ve used Cacao Powder, Carob Powder, or a Combo of both! (Carob Powder makes it sweeter!)

⭐️Happy Healthy Choices:⭐️

👍I’ve used Applesauce or So Delicious Coconut Yogurt! Both times it turned out well.

👍I used Enjoy Life Chocolate Chips, of course! (They’re the BEST vegan chocolate chips.)

👍I like to add Strawberry Slices and Cacao Nibs!

Kitehill Makes The BEST Vegan Cream Cheese Spread EVER!

The texture is creamy and decadent😍, but it’s totally healthy to eat!

Seriously!

And best of all?⭐️ It has just a few, simple ingredients that you know and recognize!👍 In fact, it’s mostly just made from Almond Milk (which is AWESOME!)

My favorite⭐️ way to have Kitehill‘s delicious Plain Cream Cheese Spread is on Ozery Bakery‘s Morning Rounds with organic fruit spread!   

YUM! Look at that balanced Breakfast or Lunch! (Just be sure to add a green smoothie or veggies with it!)

Vegan Whole Wheat Oh Mega Carrot Cake Breakfast Cookies

There were a surplus of carrots in my fridge, so I thought: carrot cake! Looking around, I found something better at one of my favorite⭐️ vegan blogs: Oh She Glows.

I found her recipe for Oh Mega Carrot Breakfast Cake Cookies! Carrot cake🍰 in cookie🍪  form? Yes, please!

These are seriously delicious! They taste and have a texture of a muffin top, which is delightful! Thus, they’re nicknamed: Whole Wheat Vegan Carrot Cake Muffin Tops!

  
*not pictured: Rolled Oats, Apple Sauce, or Walnuts. I always forget a few things!😅

I made 2⃣ changes to the recipe!

1⃣~I was out of Pecans, so I used Walnuts–but it was still great! So you can use Pecans or Walnuts!

2⃣~Maple Syrup is expensive, so I used half Maple Syrup and half Honey!  (I’m Vegan, but I do consume honey occasionally.)

And, other than that the recipe was perfect!   

⭐️Fun fact: I grounded my own Whole Wheat Pastry Flour in my Vitamix with the Grain Attatchment with Whole Wheat Pastry Berries

Vegan Healthy Cookie Dough Brownies

I love cookie dough and I love brownies, so cookie doughbrownies? Sign me up!

Chocolate Covered Katie has a great recipe for such a divine creation! (Can you tell that I kind of like her blog?)

These brownies are seriously incredible. Need proof

This is my second fine making them, they’re just that good. (They also have a habit of disappearing shortly after I make them…)

I made 6⃣ choices with the recipe:  

1⃣~I added the optional Ground Flax (extra fiber, omega boost, and helps the brownies not to crumble!)

2⃣~I used Coconut Oil (of course!)

3⃣~I used Spelt Flour (Though Spelt is not Gluten-free, it’s low in gluten, so it’s easier to digest.)

4⃣~I added Cacao Powder (superfood boost!)

5⃣~I sweetened the brownies with Coconut Palm Sugar.

6⃣~I also sweetened the brownies with Truvia baking blend

Mini Vegan GF Skinny Funfetti Cupcakes with Buttercream Frosting

This week I’m still on a vegan cupcake kick! I made an army of mini cupcakes for my boyfriend and our friends!

I decided to make Vegan Funfetti  Cupcakes, because who who can resist such a fun and fluffy cupcake?

They’re mini so they would be easy to pop in as we all played Dungeons and Dragons!   I used the Minimalist Baker‘s recipe for Vegan Funfetti Cupcakes.

I made 3⃣ changes to the recipe:

1⃣~To make it Sugar-free I used Truvia baking blend!

2⃣~To make it Gluten-free I used Bob’s Red Milll Gluten-free All Purpose flour.

3⃣~Since they’re mini cupcakes, they only need do bake for 9⃣ minutes!

 

The icing is the same that I put on my Skinny Vegan Vanilla Cupcakes

I used the Vegan Basic Vanilla Fluffy Buttercream Frosting from Isa Chandra Moscowitz’ and Terry Hope Romero’s book “Vegan Cupcakes Take Over The World“. 

You can find the recipe here! The only thing I changed is that I cut the recipe in half. (The recipe makes a LOT of Icing!)

Vegan Skinny Vanilla Cupcakes with Vanilla Buttercream Icing

This week, I wanted to make a Healthy Vegan Dessert for my Boyfriend❤️, but I was out of Vegan Chocolate Chips, so I couldn’t make my usual desserts!

Looking around for something yummy, I decided to make my Honey❤️ a simple (and healthy) cupcake that I could put his favorite fruit: Raspberries on top of it! 

I found Chocolate Covered Katie‘s Skinny Vanilla Cupcakes! They’re Vegan, healthy, and sugarfree. But, best of all they’re: fluffy, moist, and delicious

  

I Made 6⃣ Choices with the Recipe:

1⃣~I used Spelt Flour. I ground it up in my Vitamix

  • Why Spelt? It has a low Gluten content, so it’s easier to digest, and it’s a healthy grain to eat!

2⃣~Fiber boost: Flax Meal instead of an Egg Replacer.

3⃣~To make it sugarfree I used 6 teaspoons of Truvia Baking Blend.

4⃣~Instead of Nunatural Stevia Packet, I used Monk Fruit In The Raw.

  • Monk Fruit In The Raw is just the extract taken from a little known Monk Fruit, which is a type of melon. 
  • Best of all: A+ Taste!

5⃣~For the Yogurt, I used SoDelicious Coconut Yogurt.

6⃣~I used Coconut Oil.

 The Icing
? Now, that was an adventure. This was my first attempt at making a Healthy Sugar-free Icing!

I made a Chocolate Avocado Icing that I thought was good. However, the comments I got were, “Hmm…” (Insert Painfully Long Pause Here) “…Interesting.”
So, that Icing Recipe is going on the Revision List.

In the end, I made a Fluffy Vegan Buttecream Icing that everyone loved! (Even though this was not as healthy.)

I used the Vegan Basic Vanilla Fluffy Buttercream Frosting from Isa Chandra Moscowitz’ and Terry Hope Romero’s book “Vegan Cupcakes Take Over The World“. 

You can find the recipe here! The only thing I changed is that I cut the recipe in half. (The recipe makes a LOT of Icing!)

If you need to rationalize eating these Cupcakes: I made the Cupcakes Sugar-free, so the Icing sort of cancels out, right?

I haven’t made Cupcakes in such a long time, so the Icing was a bit on the sloppy side   The prettiest cupcake I made! (And the one that is going to my Honey’s house!)

The verdict? My boyfriend said, “These are so good!” And the proof? He ate 3⃣ of them! 👍

      Vegan GF Copycat Little Debbie Cosmic Chocolate Fudge Brownies

      This week have a stellar⭐️ recipe for fudgy brownies that taste decadent, but actually have a secret healthy ingredient!

      The secret healthy ingredient? Black Beans! No, don’t leave–I swear they are SUPER yummy!

      Chocolate Covered Katie’s Copycat Little Debbie Chocolate Fudge Cosmic🌙Brownies Recipe, but I used her Black Bean Brownies Recipe!   I made 3⃣ Alterations when making these!

      1⃣~I used Cacao Powder rather than Cocoa Powder, for a superfoods boost!

      2⃣~I used Maple Syrup rather than Agave Nectar*

      *Agave is on my out🚫 list as it is basically sugar🍭🚫!

      3⃣~I used the healthier option of: Coconut Oil instead of Vegetable Oil

      4⃣~Instead of the Fudge included in the recipe, I used: her Healthy Chocolate Sauce Recipe**.

        Ready for the oven~✨💛👍  Black Bean Brownies fresh from the oven, and ready to be covered in Healthy Chocolate Sauce and sprinkles to make  them Cosmic🌙 Brownies!

      I also made 3⃣ changes to the 🍫Healthy Chocolate Sauce🍫 !

      1⃣~For a superfood boost I used Cacao Powder instead of Cocoa Powder.

      2⃣~I used Vanilla Stevia Drops and no❌Agave Nectar.

      3⃣~I also added a handful of Chocolate🍫 Chips in with the Coconut Oil when melting it.  Almost too pretty to eat, almost!
