The Start of My Health Journey!

I’m on my path to eating healthy and feeling happy! 

Last year when I was vegan, working out, and generally healthy all around–I weighed 120 pounds. 


I am now up to 160 pounds. 


I’ll keep track of my weight loss as I go. 

Maybe you think I look fine, but I don’t think so. And it’s not just skin deep.

 I want to be HEALTHY!
I’m only  3 days on this vegan diet and I’m less bloated, my skin is clearing, and the fat is loosening!

Happy Veganversery to Me+Before and After Weight Loss

✨Today is officially my 1⃣ Month Veganversery, and I’m so excited😁

🌟Can you believe it’s only been 1⃣ Month? It feels like so much longer!

So, how do I feel?⭐️Better than I ever have!💛

My skin has cleared✨ to the point that makeup is unnecessary (but fun to do!)💁

Me without any makeup:

 My energy level has dramatically increased👆, helping me to exercise regularly (and therefore feel even better.)💃

But best of all? I have lost🍃 2⃣2⃣ pounds! And, I’m continuing to loose weight!*

 *(I started my plantbased diet in May and then a month ago took the plunge into my Vegan Journey–and the fat really started to melt away!) 

💁Now, I don’t❌ count calories (like I did before I was Vegan.)

Why? 💛Each food that goes into my body is healthy and good for me.💛

Everything I eat is plantbased🌱👍 and free of: 👎refined sugars❌, dairy❌, meat❌, eggs❌, and usually free of gluten❌ as well!

1⃣ Month going strong💪 and I plan to stay in it for the long haul. 

⭐️This has truly been one of the best decision that I have ever made!⭐️

For the 4th of July🇺🇸: Black Bean Burrito Burgers🍔 and RedWhite&Blue Muffins🎉

Today is a specialholiday post!

In honor of the 4th of July🎉🇺🇸 I made: Vegan Black Bean Burrito Burgers🍔 with Vegan Red, White, and Blue🇺🇸 Muffins!🎆

The burger🍔 recipe uses leftover Taco-seasoned Black Beans and Cilantro Lime Quinoa from my Black Bean Burrito Bowl! Don’t have leftovers? No problem!

  ✨Black Bean Burrito Burgers🌟

Black Bean Burrito Burgers

  • Servings: 6 Patties
  • Difficulty: Easy

What you need:

  • Taco-seasoned black beans (or 1 can black beans)
  • 1 canned black eyed peas 
  • Cilantro Like Quinoa (or one cup quinoa)
  • Cilantro
  • Lime
  • Salsa
  • Lettuce (Romaine or Butter)
  • Avocado
  • Salsa (or chopped tomatoes, onion or green onion, and squeeze of lime.)
  • Slices of mangoes, peaches or pineapples
  • Your favorite hamburger buns
  • Optional: Dairy-free Daiya Cheddar Shreds
  • Optional: Your favorite hot sauce 

Taco seasonings:

  • Cumin
  • Garlic powder
  • Onion powder
  • Paprika
  • Chili powder
  • Sea salt

How to make it:

  1. If you don’t have leftover taco-seasoned black beans: drain and rinse a can of black beans.
  2. Drain and rinse a can of black eyed peas.
  3. In a small bowl, make a flax egg.
  4. In a large bowl, add the beans and peas to it.
  5. If you don’t have Cilantro Lime Quinoa, make 1 cup of quinoa.
  6. Add 1/3 cup quinoa, taco seasonings, flax egg, and cilantro to the large bowl. Also squeeze half a lime into the bowl. If you didn’t make the Cilantro Lime Quinoa, add chopped onions. Mix until combined.
  7. Mash the mixture with a potato masher. Mash until most of the beans and peas are smooshed, but keep some whole for interesting texture.
  8. Take a handful of the mixture and form into patties. Square the edges and put a dent in the middle.
  9. Grill outside on a grill, inside on a Foreman Grill (this is what I did,) or on a pan. Grill for 10-12 minutes or until both sides are browned and feel crispy.
  10. Serve on lettuce or hamburger buns, with lettuceavocado, salsa (or chopped tomatoes, onions or green onions, and squeeze of lime,) and a slice of mango, peach, or pineapple.
  11. Optional: For a “cheese” burger add Dairy-free Daiya Cheddar Shreds
  12. Optional: Add your favorite hot sauce and enjoy!

For the 4th of July🎉🎆dessert: 

Red, White, and Blue🇺🇸 Muffins  

Recipe is Oh She GlowsBlissful Blueberry Banana Spelt Muffins.

Once again, Oh She Glows has made an STELLAR💫 (to say the least) recipe! Blueberry Muffins just so happen to be my favorite💛 muffin!  These are super moist and have just the right amount of sweetness.

For the 4th of July🎆🎉 I decorated them Red, White, and Blue and I was very happy with the results! It took these muffins over the top, into an amazing and deliciously unique flavor!

Red, White, and Blue Muffins

  • Servings: 12-24
  • Difficulty: Easy

What you need:

  • Blissful Blueberry Banana Spelt Muffins
  • 1/4 cup Dairy-free Daiya Cream Cheese
  • 1 tbsp Truvia baking blend
  • Vanilla extract
  • Fresh strawberries
  • Fresh blueberries
  • Optional extra sweetness: 1 full squirt of Vanilla Stevia Drops

How to make them:

  1. Mix together the all of the ingredients using a spoon or a mixer.
  2. Smear it once tips of the muffins using a butter knife.
  3. Top with 2 slices of strawberries and 2 blueberries.

  All those healthy ingredients!💛💛   Muffin batter, ready to visit the muffin tin!

     Ready to go in the oven~✨

     These are truly blissful even without the Red, White, and Blue🇺🇸 decorations!🎉

     Eat them before they disappear as fast as fireworks!🎆🎇

    Vegan Cookie Cake: Looks Ugly, Tastes Pretty

    Special Holiday Recipe Review: Today was my boyfriend’s birthday!🎉🎊

    A while back, I asked him what he wanted me to bake him (and I left out the for your birthday part…)  he said a cookie cake!🍪 So, I decided to surprise him with a cookie cake for his birthday!

    Knowing he loves cookies🍪 that are moist and chewy in the middle,  I searched around and found a recipe that looked like a winner!🎉 👏

    🌟I found this vegan, gluten-free Chocolate Chip Cookie Cake from the cooking blog, Guy Gone Vegan! ✨

    The dough after chilling overnight🌌: 

    Note: I altered the recipe in 3⃣ ways!✨

    1⃣~Instead of All Purpose Flour, I used Almond Meal (which is my new favorite gluten-free flour🌟!)

    • 👍Almond meal can be store bought or simply made from putting raw almonds in a food processor, magic bullet, or pulsing on a blender.
    • 🌟Almond Meal gives anything an incredible deep, rich, and nutty flavor.
    • Use it 1⃣ to 1⃣ to replace any flour with any recipe, but you may have to reduce any liquids.
    • 👌HOWEVER, Almond Meal  will make the color deeper and darker brown instead of the light golden brown we all love our cookies 🍪(and cookie cakes to be.)
    • So you decide what is the right flour for you.💁🏻

    Look at that pretty flour~✨

    2⃣~ I used coconut palm sugar instead of granulated sugar.🍬 

    • Coconut palm sugar is my favorite✨ sugar to use in baking!
    • Use 1⃣to1⃣ when replacing other sugars.
    • It has a low glysemic index👍, it ACTUALLY contains trace vitamins and minerals*, and has only 1⃣5⃣ calories!

    *It contains zinc, magnesium, potassium and copper

    • 😻 Additionally, it has a divine, rich carmelly and molassesy taste. 👏
    • HOWEVER, it also tends to darken the color, so for a less healthy but more picturesque cookie cake🍪 keep the flours and sugars the same.🙏
    • But best of all…

    I’m  Cats love it too! 😸

    3⃣~ The recipe actually forgot to say when to put in molasses (which is on the list of ingredients), so in turn I forgot to add it. Fortunately, my coconut palm sugar still gave the cookie cake a nice, subtle, molassesy taste. 👌

    ‼️Also, when using Almond Meal–you want to reduce the liquids in your recipe. 🌟⭐️ So if using almond meal? Forgo the molasses and use coconut palm sugar.☑️

     Pressed into a 9⃣ inch cake pan and ready to be baked!

    IMPORTANT TIP: The recipe says that after you bake it, to bump it up from 3⃣5⃣0⃣ to 4⃣2⃣5⃣ and leave it in for a couple minutes.  DO THIS!  Otherwise you will get the baking blues! 😨 I didn’t do this initially, and my cake was liquidy and bubbling until I did.

    Note: when I took the cake out it was still bubbling.  If yours looks like the video when it comes out of the oven : DON’T PANIC!😱 Let it sit and it will settle. So long as the fork🍴 comes out clean you’re golden!💛

    The Skinny on the Icing!

    • 🍰Let the cake cool for a long time before icing it.!
    • Use allnatural non hydrogenated vegetable  shortening, unless you want melty mess like my cake!👇(I didn’t use any shortening)
    • Instead of Oreos (which still contain trans fats, use NewmanO’s!)
    • I had to use about a 1/2 cup more powdered sugar, than it says, to taste perfectly sweet~

     TA DA! 🎉 The vegan (and gluten-free) cookie cake! 🍪 Not pretty to look at, but it tasty to eat.

    • My boyfriend loved💕 it! He said it didn’t taste healthy (even though it was~) & he thought it was very yummy.
    • Also, being a sweetie (and the best boyfriend ever) he told me he thought it was a beautiful cake~❤️
