Motivational Quote Monday: Take it step by step…

Some journeys start out with a leap of faith.

But most journeys start step by step and day by day. 

At least that’s how I need to think about my journey to health. I can’t think about just jumping into a new lifestyle and instantly reaching my goals.

Rather I need to take it step by step. I can jump into my new lifestyle, but I can’t get bogged down because my goal hasn’t been met quite yet.

    You have me inspired! Can you explain what foods make up a healthy vegan diet and what elements you consider as you put together your plan for the day or the week?

    1. In a healthy vegan diet I restructure the food pyramid with veggies first, then fruits, legumes, nuts, seeds. Followed by whole grains.

      Lastly, The top contains some other things like meat substitutes and dairy substitutes which I think should be in moderation. Unhealthy sugars/processed foods are at the very top.

      I honestly eat what sounds good at the time. The key is keeping a stock of healthy food at all times. I always try to keep Tofu and tempeh handy along with fresh fruits and veggies, beans, and whole grains. If you keep unhealthy foods out of the house you can’t eat them!

      However, sometimes I do make a meal plan like Taco Tuesday, Bean Wednesday, ETC.
