Motivational Quote Monday: Wisdom from Star Wars + the Super Blood Moon

Hey there! Thanksโœจ for visiting Happy Healthy Noms for this week’s Motivational Quote Monday.๐ŸŒž

Happy Monday!

Did you see that moon last night? It was stunning, to say the least.

๐ŸŒ‘๐ŸŒ’๐ŸŒ“๐ŸŒ”๐ŸŒ•๐ŸŒ–๐ŸŒ—๐ŸŒ˜๐ŸŒ‘

๐ŸŒ‘The weather was just right, mot too warm, not too chilly. The winds were still, and there wasn’t a cloud in the sky.๐ŸŒ•

๐ŸŒI watched the moon become full and then slowly eclipse, and become red, and it was truly an experience that I’ll never forget.๐ŸŒš

Did you miss the moon? Click here see the entire phenomenon, sped up.

In case you didn’t know last night’s Full Moon was a Super Blood Moon. So, being a Supermoon, the moon was larger. Additionally, it was covered by a lunar eclipse! It was a phenomenon that only happens every 30 years!

Vegan Baking Cheat Sheet + Celebrating The Autumnal Equinox: The First Day of Fall!

Hey there! Thanksโœจ for visiting Happy Healthy Noms for this week’s Tidbit Tuesday!๐Ÿ’ซ

Fall is approaching, in fact Wednesday is the Autumnal Equinox, AKA: the official First Day of Fall! I don’t know about you, but I LOVE Fall!  (Image by: Heather Dawn)

With cooler weather and leaves changing colors, we’ll all be baking bread, muffins, cookies, and all kinds of goodness!

But, chances are not all these recipes are vegan! Maybe you have baked goods that are a tradition for you and your family, or you find great recipes that aren’t vegan.

I know that’s been happening to me lately!

So, here’s a guide to vegan-izing your baked goods!

NOTE: Unless specified, use the same measurements from the recipe for the replacements!

Eggs can be replaced with:

Speaking of the Autumnal Equinox, did you know that besides being the First Day of Fall, it is also the Pagan Holiday of Mabon?

I know, I said Pagan, but don’t run away! Anyone can celebrate the First Day of Fall!

Afterall, the way I see it is that Mabon is simply celebrating Fall’s arrival and acknowledging that Winter is coming (Yeah, had to put in that Game of Thrones reference.)

Here’s an article on the Huffington Post about the Autumnal Equinox and Mabon.

Below are some ways that you can celebrate Fall’s arrival!

How To Celebrate the Autumnal Equinox or Fall’s Arrival:

1. Bake something festive for fall.

  • Examples: Vegan breads (apple, banana, pumpkin,) cookies, scones, cakes, or a pie.

3. Drink something festive for fall.

  • Apple cider, vegan hot cococa, or hot tea.

4. Eat something festive for fall.

  • Get your soup amd stew recipes out!
  • Cook with squashes and pumpkins!

4. Take a walk outside and look at the leave’s changing colors, and the fallen acorns.

  • Maybe collect a few leaves or acorns to decorate your house, or to craft with.

5. Acknowledge the bountiful harvest we have, and give some of the bounty to a Food Drive!

6. Do Fall-inspired crafts involving apples, corn, acorns, fall leaves, and other fall finds!  (Image by: Kim)

Above is a creative apple๐ŸŽ craft! Cut the top of the apple, core the inside out, and put a tea light in it.

  • Speaking of Apples๐ŸŽ. Did you know if you cut an apple in half it looks like a starโญ๏ธ? It’s true! Go try it!

Until next time, remember: Have your veggies and eat your fall favorites too!

Motivational Quote: MOONday

Hey there! Thanksโœจ for visiting Happy Healthy Noms for this week’s Motivational Quote Monday.๐ŸŒ•

Today is a special post, because there is something special happening next week! (Don’t worry, I still have a Motivational Quote at the end of this post!)

On Sunday, September 27th there will be a Full Moon๐ŸŒ•. (Not this Sunday, but the next.)

But, not just any Full Moon๐ŸŒ•. It’ll be a Supermoon๐ŸŒ• (bigger, and higher in the sky.)

That’s not all! It’ll also be a Lunar Eclipse.

So, there will be a Supermoon๐ŸŒ• and a Lunar Eclipse on the same night! This only happens every 30 years, and the last time was in 1982.

I encourage you to go check it out

After all, it won’t happen again until 2033!

 (Image from: Pixabay)

I’m going to celebrate this exciting event and make Vegan Full Moon Crescent Cakes! (I’ll replace butter with half Coconut Oil and half Earth Balence Buttery Sticks, and replace the egg with a flax egg!)

Read more about this awesome astronomical event here Because remember the moon always rises and falls, just like you do.

And you’re never alone, because the moon’s always there!

You just have to look up to see your best friend forever, The Moon๐ŸŒ•!

I know it seems silly, but you can talk to the moon! (Most judgement-free friend ever!) Or simply meditate while gazing at the moon’s beauty.

If no one else, the moon is always there, watching over you.

Have a happy MOONday!

Until next time, remember: eat your veggies and look up at your friend, The Moon!๐ŸŒ’๐ŸŒ•๐ŸŒ”

Happy Healthy Vegan Chocolate Mug Cake

Hey there! Thanksโœจ for visiting Happy Healthy Noms for this week’s Review Thursday.๐ŸŒŸ

Recently, I found a delicious, healthy, Vegan Chocolate Mug Cake at Food Fiasco.

The real recipe is for a Vegan Chocolate Lava Cake, but I’m too lazy–so I skip the lava and make it a Chocolate Mug Cake!

Yes, you read that correctly, a mug cake

This deliciousness only takes a few minutes to make!

This cake tastes decadent, but it’s actually healthy!

I usually have this for dessert once a week–it’s just that good!

I made 3 changes to the recipe:

1. I used Whole Wheat Flour, instead of White While Wheat Flour.

2. Instead of sugar, I used Truvia Baking Blend.

3. Instead of Cocoa Powder I’ve used Cacao Powder, Carob Powder, or a Combo of both! (Carob Powder makes it sweeter!)

โญ๏ธHappy Healthy Choices:โญ๏ธ

๐Ÿ‘I’ve used Applesauce or So Delicious Coconut Yogurt! Both times it turned out well.

๐Ÿ‘I used Enjoy Life Chocolate Chips, of course! (They’re the BEST vegan chocolate chips.)

๐Ÿ‘I like to add Strawberry Slices and Cacao Nibs!

Writers Tips Wednesday: How To Be A Writer? Always Write!+Beat Writer’s Block

Hey there! Thanksโœจ for visiting Happy Healthy Noms for Writing Tips Wednesday!๐Ÿ““

Welcome to the first installment of Writing Tips Wednesday! For now on Wednesday will either be What Vegans Eat Wednesday OR Writing Tips Wednesday!

Iโ€™m not just a food blogger, Iโ€™m also a Professional Writing Major at a University and an author of Young Adult Novels (that will soon be published.)

Each Writing Tips Wednesday, I’ll post my writing tips, writing tips from famous authors, and wonderful writing resources

โœ๏ธWriting Quote of the Week:๐Ÿ““

(Image from Books by Bailey)

I know this seems like a simple concept, but it’s actually not an easy thing to do (when you are serious about writing.)

When you’re a professional writer, you can’t just write when you feel inspired–you have to write every single day.โœ”๏ธ

But, you can’t just close this blog page and say, “Yeah, I’ll write every day!”

NO! You have to set a goal for yourself! Otherwise, you’ll never write!

โญ๏ธ(Doing the following will beat writer’s block!)โญ๏ธ

Every day, I set a timer, and make myself write for one hour (even if I don’t feel like it!)

You have to set it for whatever time works for YOU.

Or, maybe set a goal of how many pages, or words you’ll write.

The important thing is that it works for YOU. (And, figuring that out may take some trial and error.)

Additionally, I cannot stress enough how important reading is! The more you read, the better your writing will be, seriously.

๐Ÿ‘‰Go read a book, and then see how much your writing improves, I dare you!

โญ๏ธWriting Resource of the Week:๐ŸŒŸ

This week I read the book Living Write by: Kelly L. Stone, and I highly recommend it. It has great tips for writers, and it is very motivational. So if you’re in a bit of a writer’s block, go read that book!

Until next time, remember: read๐Ÿ“– and writeโœ๏ธ every day!
