Tofu made with: cumin, garlic powder, onion powder, nutritional yeast, salt, and tofu. 

Served with: lettuce, crushed tortilla chips, salsa, and Danita Foods shredded Vegan cheese!

Zesty Asian-inspired Tempeh

Today I am sharing a simple dish that has become a staple for dinner! It’s super yummy!

Zesty Asian-inspired Tempeh

Marinate tempeh in soy sauce, sweet chili sauce, and hoisin sauce. 

Cook until light brown in a pan.

Serve on top of rice with cilantro, a lime, and green onions!

You’re probably wondering what tempeh is, right? 

It’s actually a lot like Tofu, but less processed. It’s made of fermented soy compacted together. It’s tastes different than Tofu. In my opinion, it’s more flavorful and tasty!

Foodie Friday: Nooch Coated TofuΒ

My favorite lunch/dinner: Nooch Crusted Tofu.

(Nooch is Nutritional Yeast, it naturally has a cheesy and buttery flavor.)

Spray Braggs amino acids on extra firm Tofu. 

Coat the Tofu with nooch.

Pan fry with vegan butter. 

Put on a whole wheat bun. I like to add veganaise to mine! 

And that’s it!

Foodie Friday: Easy Healthy Vegan Nachos + How To Make Homemade Tortilla Chips

Today I’m sharing with you some fun vegan nacho ideas that I adore, I also have a great recipe for Oil-Free Happy Healthy Homemade Tortilla Chips! 
The Tortilla Chips:

The Cheese:

  • Daiya Cheddar Shreds (Or as I like to call it, the best vegan cheese ever! Seriously. It tastes AMAZING, and even melts and stretches like real cheese!)

 
Choose your Toppings:

Veggies:

  • Tomatoes
  • Avocado
  • White, Red, or Green Onions

Beans:

  • Kidney Beans
  • Black Beans
  • Chili Beans
  • Vegan Refried Beans

Grains:

  • Quinoa

Other:

  • Salsa
  • Hot Sauce
  • Nutritional Yeast
  • Cilantro
  • Black Olives
  • Squeeze of Lime

 β­οΈHomemade Corn Tortilla Chips⭐️ 

  • Cut 1-4 tortillas (depending how many chips you want) into strips
  • I loveπŸ’›Food for Life’s Sprouted Corn Tortillas! 
  • Place the strips on a parchment paper lined pan in the oven on 425
  • Keep checking on them, and take them out when they feel crispy! 
  • No oil necessary, and completely guilt-free!

 Nachos with my Homemade Tortilla Chips!   Sometimes you just want to keep it simple for a snack.

 Other times you want to load those nachos up for lunch or dinner!

Happy Healthy Vegan Overnight Oats Recipes

Today I am sharing with you some of my favorite🌟Vegan Overnight Oats recipes.

I eat these almost every day, they’re just that good.

These recipes are filling, satisfying, and oh so YUMMY! 

The best part? You can make them the night before, and eat right away in the morning!

 Classic Overnight Oats

  • This recipe is simple, but yummy, and very customizable! The chia seeds plump up in the morning, so it’s almost like tapioca pudding!

Classic Overnight Oats

  • Difficulty: Easy

What’s in it?

  • 1/2 cup Oats
  • 1 cup  Silk Unsweetened Almond Milk
  • 1T Flax Meal
  • 1T Chia Seeds
  • Your favorite sweetener 

How to Make?

  1. Put all the ingredients in a glass bowl or jar, and leave in the fridge overnight.
  2. In the morning leave cold, or microwave for a few minutes.
  3. Add your favorite sweetener, and any mix-ins.

Mix-ins:

  • Fresh fruit, dried fruit, nuts, coconut flakes, peanut butter, cacao powder, applesauce, fruit spread, apple butter, purΓ©ed, chopped dates, pumpkin, carob powder, cinnamon, or anything you come up with!

 Dad’s Oatmeal Raisin Cookie Overnight Oats

  • I’m so proud of my Dad! For health reasons, he has become mostly Vegan! He came up with this delicious recipe, and eats it almost every morning.

  • 1/2 cup Oats
  • 1 cup  Silk Unsweetened Almond Milk
  • A handful of Raisins
  • 1T Flax Meal 
  • 1 T Chia Seeds
  • (Optional: Chopped Pecans and Coconut Flakes)
  • (Optional: Sweeten with The Date Lady Date Syrup)

How to Make?

  1. Put all the ingredients in a glass bowl or jar, and leave in the fridge overnight.
  2. In the morning leave cold, or microwave for a few minutes.

  Banana Bread Overnight Oats

  • I really love this recipe, it seriously does taste like banana bread!

Banana Bread Overnight Oats

  • 1/2 cup Oats
  • 1 cup Silk Unsweetened Almond Milk
  • 1/2 a Banana (mashed)
  • 1/2 a Banana (sliced)
  • A handful of Chopped Walnuts
  • (Optional: 1 T Flax Meal and 1 T Chia Seeds)

How to Make?

  1. Put all the ingredients in a glass bowl or jar, and leave in the fridge overnight.
  2. In the morning leave cold, or microwave for a few minutes.
  3. Too with sliced Bananas and chopped Walnuts.

Easy Vegan BBQ Baked Beans Burgers

Today I have a super yummy and super easy dinner for you: Vegan BBQ Baked Beans Burgers

This recipe is bound to please Vegans and non-Vegans alike! The secret ingredient, Baby Bella Mushrooms, gives it a nice meaty texture

Not Vegan? Try doing Meatless Mondays! Try BBQ Baked Bean Burgers for next Monday’s Meatless Monday! Trust me, you won’t miss the meat, this recipe is just that good!

 Vegan BBQ Baked Beans Burger 

Vegan BBQ Baked Beans Burger

  • Servings: 4
  • Difficulty: Easy
  • Print

  • 1/2 cup Chopped Baby Bella Mushrooms (washed/dried)
  • 1t Onion Powder
  • 1t Garlic Powder 
  •  1 can Canellini Beans (drained/rinsed)
  • 2/3 cup Quick Oats
  • 1/4 cup Annie’s Vegan BBQ Sauce.
  1. SautΓ© Mushrooms on Medium Heat with Water (add a T or so).
  2. Put the Mushrooms in a bowl and add Onion Powder and Garlic Powder.
  3. Add the Canellini Beans!
  4. Mash it up, leaving some Beans whole for texture.
  5. Add the BBQ sauce and stir in the Quick Oats.
  6. Divide into fourths andmake into patties.
  7. Bake for 7 minutes each side.
  8. Put in a Toasted Whole Grain Vegan Bun or a Lettuce Wrap. 
  9. Top with Homemade Vegan Cheese or Daiya Cheddar Slices
  10. On the side add Corn that’s been roasted over the stove’s burner!

How to Make Simple, but Delicious Coconut-Covered Date Candy

Today I’ll show you how to make Coconut-Covered Date Candy🍬 that looks and tastes like it didn’t just take you only 5⃣ minutes to make!

All you need are Medjoool Dates and Shredded Coconut!  1⃣~ Cut a slit down the side of the date. 2⃣~ Open up the date and take out the pit 3⃣~ Flatten the date with your fingers. Fold the date over, so the sticky side is outside. Roll the date into a rounded rectangle or as close to a ball as you can. The stickiness of the date will keep its shape.    4⃣~ Roll the date around in shredded coconut  5⃣~ Ta-da! Coconut-covered date candy~✨

Homemade Vegan Cheese+Grilled Cheese+Fav Vegan Cheeses

For the most part going Vegan was easy for me! The hardest part was giving up cheese (but for ethical reasons I gave it up.)

But it wasn’t hard for long! In fact, I never miss cheese!

Why?

Because just look at all the Vegan cheese products out there:

  Daiya is my FAVORITE Vegan cheese brand, and I absolutely reccomend any of their products.

In the mood for quick and easy mac & cheese? Try Earth Balance‘s mac & cheese with some broccoli.
  

How do you say: YUM! Right?

But, sometimes I want something that is more natural and not processed.

So, I make my own cheese (and it’s SUPER easy!)

 

Now THAT’S how you say YUM!

  • Servings: Several
  • Difficulty: SUPER Easy

What’s in it?

  • 1 Cup (soaked overnight or for a couple hours) Raw Cashews
  • 1/4 Cup Nutritional Yeast
  • 1/4 Cup Water
  • 2T Apple Cider Vinegar
  • A pinch of Garlic Powder
  • A couple dashes of Himalayan Pink Salt.

How to make it?

  1. Put everything in a Vitamix, blender, or food processor.
  2. Blend until it has a hummus-like consistency.
  3. Enjoy!

How can you enjoy your homemade Vegan cheese?

Use it as a dip for veggies!

 

Put it on burgers or sandwiches!
   

Or my favorite: make delicous Vegan Grilled Cheese!

Put it on Dave’s Killer Bread (I love the Good Seed Thin Slices) or Food for Life Ezekiel Bread!

Yummy Raw Vegan GF Pad Thai

Today’s recipe is crisp, refreshing, and seriously good! It has the taste of a real Pad Thai, but this is raw and totally vegan! The carrot and cucumber noodles have a nice crunch and compliment the veganized Pad Thai sauce! 

Note: You will need a vegetable spiralizer!

Raw Vegan Pad Thai

  • Servings: 1
  • Difficulty: Easy

What’s in it?

Noodles“:

  • 2 medium-large carrots
  • 1/2 cucumber

Sauce:

  • 2 T Chopped Onions
  • 1/2 Lime
  • 1 t Minced Garlic
  • 2 T Soy Sauce
  • 1 T Rice Vinegar
  • 1 Packet Sweetener (I used Stevia)*
  • 1/4 t Siracha**

*Skip if you don’t like your Pad Thai sweet.

**Squirt as much as you want it you like it spicy!

    Garnish:

    • 1/2-1/4 lime
    • 1 T peanuts
    • Cilantro 

      How to make it?

      1. Over a plate, use a vegetable spiralizer to make the carrot and cucumber noodles.
      2. Chop the onions and put them in a small bowl. Put all the sauce ingredients in the bowl and mix with a spoon.
      3. Pour the sauce over the “noodles“.
      4. Top with peanuts and cilantro. Place the lime on the side.
      5. Squeeze the rest of the lime and enjoy

      Un-Raw Option: Add grilled tofu or tempeh for more protein! (Calories: w/tofu: 190, w/tempeh: 200)

        Vegan Happy Healthy Popcorn (Low-Cal) (Low-Fat)

        What’s in it?

        • 1/2 Cup Organic Popcorn Kernals
        • 1 T Coconut Oil

        How to Make it?

        1. Put in a large covered pot on Medium Heat.
        2. Move the pan side to side. When the popping slows turn the heat off. 
        3. Pour into a bowl and add Salt!

        Fun HappyHealthyPopcorn Flavors:

        • Vegan Cheezycorn: Add Nutritional Yeast.
        • Spicy Vegan Cheezycorn: Add Nutritional Yeast and Cayenne Pepper.

        1. Put 1/4 Cup Organic Kernals in a brown paper bag.
        2. Microwave for about 2 Minutes. 
        3. Take out when the pops slow down.
