Motivational Quote: MOONday

Hey there! Thanks✨ for visiting Happy Healthy Noms for this week’s Motivational Quote Monday.🌕

Today is a special post, because there is something special happening next week! (Don’t worry, I still have a Motivational Quote at the end of this post!)

On Sunday, September 27th there will be a Full Moon🌕. (Not this Sunday, but the next.)

But, not just any Full Moon🌕. It’ll be a Supermoon🌕 (bigger, and higher in the sky.)

That’s not all! It’ll also be a Lunar Eclipse.

So, there will be a Supermoon🌕 and a Lunar Eclipse on the same night! This only happens every 30 years, and the last time was in 1982.

After all, it won’t happen again until 2033!

I’m going to celebrate this exciting event and make Vegan Full Moon Crescent Cakes! (I’ll replace butter with half Coconut Oil and half Earth Balence Buttery Sticks, and replace the egg with a flax egg!)

And you’re never alone, because the moon’s always there!

You just have to look up to see your best friend forever, The Moon🌕!

I know it seems silly, but you can talk to the moon! (Most judgement-free friend ever!) Or simply meditate while gazing at the moon’s beauty.

If no one else, the moon is always there, watching over you.

Caturday: Cats and Also Other Things

This week along with cute pictures of my cats🐱, is a video🎥 with an animal💛 that most people don’t appreciate how cute they can be!

Still not convinced of their cuteness? Further proof:

Speaking of cows🐮. It’s one of my dreams✨ someday to live on a plot of land (in a nice house!)💛

I want to create a sanctuary⭐️ for Cows🐮, Pigs🐷, Chickens🐔, GoatsSheep🐏🐑 and any other animals that I can save from SlaughterhousesDairy Farms, or other terrible places.👏

I’ll also rescue stray cats🐱 and save cats😺 from the pound. I’ll let all the animals roam around the grassy🌱 land, so all the rescued animals can finally have a happy life!🌈

👉Don’t worry, I didn’t forget that this is Caturday!😺Now onto the cute cats!😸 This is my Princess, Kiki. But don’t let her cute looks deceive you, she hates everyone in the world–but me!😸

Here’s my sweet and goofy cat, Indi THIS cat is as cute and sweet as she appears!

👉I want to start featuring animals other than cats on Caturdays. Problem is I can’t think of a cute name that incorporates Animals (or animal appreciation, love animals, etc) + Saturday. Any ideas? Or should I keep it as Caturday?

Happy Veganversery to Me+Before and After Weight Loss

✨Today is officially my 1⃣ Month Veganversery, and I’m so excited😁

🌟Can you believe it’s only been 1⃣ Month? It feels like so much longer!

So, how do I feel?⭐️Better than I ever have!💛

My skin has cleared✨ to the point that makeup is unnecessary (but fun to do!)💁

Me without any makeup:

 My energy level has dramatically increased👆, helping me to exercise regularly (and therefore feel even better.)💃

But best of all? I have lost🍃 2⃣2⃣ pounds! And, I’m continuing to loose weight!*

Before and After: 

1⃣3⃣2⃣ Pounds👉1⃣1⃣0⃣     
 *(I started my plantbased diet in May and then a month ago took the plunge into my Vegan Journey–and the fat really started to melt away!) 

💁Now, I don’t❌ count calories (like I did before I was Vegan.)

Why? 💛Each food that goes into my body is healthy and good for me.💛

Everything I eat is plantbased🌱👍 and free of: 👎refined sugars❌, dairy❌, meat❌, eggs❌, and usually free of gluten❌ as well!

1⃣ Month going strong💪 and I plan to stay in it for the long haul. 

⭐️This has truly been one of the best decision that I have ever made!⭐️

For the 4th of July🇺🇸: Black Bean Burrito Burgers🍔 and RedWhite&Blue Muffins🎉

Today is a specialholiday post!

In honor of the 4th of July🎉🇺🇸 I made: Vegan Black Bean Burrito Burgers🍔 with Vegan Red, White, and Blue🇺🇸 Muffins!🎆

The burger🍔 recipe uses leftover Taco-seasoned Black Beans and Cilantro Lime Quinoa from my Black Bean Burrito Bowl! Don’t have leftovers? No problem!

  ✨Black Bean Burrito Burgers🌟

Black Bean Burrito Burgers

  • Servings: 6 Patties
  • Difficulty: Easy
  • Print
What you need:

  • Taco-seasoned black beans (or 1 can black beans)
  • 1 canned black eyed peas 
  • Cilantro Like Quinoa (or one cup quinoa)
  • Cilantro
  • Lime
  • Salsa
  • Lettuce (Romaine or Butter)
  • Avocado
  • Salsa (or chopped tomatoes, onion or green onion, and squeeze of lime.)
  • Slices of mangoes, peaches or pineapples
  • Your favorite hamburger buns
  • Optional: Dairy-free Daiya Cheddar Shreds
  • Optional: Your favorite hot sauce 

Taco seasonings:

  • Cumin
  • Garlic powder
  • Onion powder
  • Paprika
  • Chili powder
  • Sea salt

How to make it:

  1. If you don’t have leftover taco-seasoned black beans: drain and rinse a can of black beans.
  2. Drain and rinse a can of black eyed peas.
  3. In a small bowl, make a flax egg.
  4. In a large bowl, add the beans and peas to it.
  5. If you don’t have Cilantro Lime Quinoa, make 1 cup of quinoa.
  6. Add 1/3 cup quinoa, taco seasonings, flax egg, and cilantro to the large bowl. Also squeeze half a lime into the bowl. If you didn’t make the Cilantro Lime Quinoa, add chopped onions. Mix until combined.
  7. Mash the mixture with a potato masher. Mash until most of the beans and peas are smooshed, but keep some whole for interesting texture.
  8. Take a handful of the mixture and form into patties. Square the edges and put a dent in the middle.
  9. Grill outside on a grill, inside on a Foreman Grill (this is what I did,) or on a pan. Grill for 10-12 minutes or until both sides are browned and feel crispy.
  10. Serve on lettuce or hamburger buns, with lettuceavocado, salsa (or chopped tomatoes, onions or green onions, and squeeze of lime,) and a slice of mango, peach, or pineapple.
  11. Optional: For a “cheese” burger add Dairy-free Daiya Cheddar Shreds
  12. Optional: Add your favorite hot sauce and enjoy!

For the 4th of July🎉🎆dessert: 

Red, White, and Blue🇺🇸 Muffins  

Recipe is Oh She GlowsBlissful Blueberry Banana Spelt Muffins.

Once again, Oh She Glows has made an STELLAR💫 (to say the least) recipe! Blueberry Muffins just so happen to be my favorite💛 muffin!  These are super moist and have just the right amount of sweetness.

For the 4th of July🎆🎉 I decorated them Red, White, and Blue and I was very happy with the results! It took these muffins over the top, into an amazing and deliciously unique flavor!

Red, White, and Blue Muffins

  • Servings: 12-24
  • Difficulty: Easy
  • Print
What you need:

  • Blissful Blueberry Banana Spelt Muffins
  • 1/4 cup Dairy-free Daiya Cream Cheese
  • 1 tbsp Truvia baking blend
  • Vanilla extract
  • Fresh strawberries
  • Fresh blueberries
  • Optional extra sweetness: 1 full squirt of Vanilla Stevia Drops

How to make them:

  1. Mix together the all of the ingredients using a spoon or a mixer.
  2. Smear it once tips of the muffins using a butter knife.
  3. Top with 2 slices of strawberries and 2 blueberries.

  All those healthy ingredients!💛💛   Muffin batter, ready to visit the muffin tin!

     Ready to go in the oven~✨

     These are truly blissful even without the Red, White, and Blue🇺🇸 decorations!🎉

     Eat them before they disappear as fast as fireworks!🎆🎇

    Bonus: How to Make Nicecream

    Love❤️ ice cream🍦 but don’t love💔 the calories? Here’s a customizable vegan👍 ice cream🍦, that is around 1⃣0⃣0⃣ calories, but has all the sweetness and creaminess of your favorite🌟 ice cream🍦!

    You can have it alone in a bowl🍨, topped with your favorite🌟 ice cream🍦 fixins, OR use it instead of a smoothie in a smoothie bowl🍵!

    So, what’s in it? Frozen Bananas!🍌 That’s it, seriously

    Nice Cream

    • Servings: As much as you want!
    • Difficulty: Super Easy
    • Print

    What you need:

    • Frozen bananas
    • Your favorite flavorings
    • A Vitamix makes this PERFECTLY, but if you don’t have one any blender or food processor is fine.

    How to make Nicecream:

    1. Blend frozen bananas.
    2. It will be hard to blend at first, but stick with it.
    3. When it looks like rice, you’re doing great. Now, keep blending until creamy and ice creamy!
    4.  Ta-da~ Nicecream
    5. Add a date to make sweeter.
    6. Add fruits or flavoring to make different types of Nicecream*.


    • Vanilla: Blend with vanilla extract and/or vanilla vegan protein powder.
    • Chocolate: Blend with chocolate extract, chocolate chips, vegan chocolate protein powder,carob  powder, and/or cacaco powder.
    • Fruity: Blend/top with berries, cherries, or any fruits.
    • Coconut: Blend with coconut milk and top with shredded coconut.

    🍧Nicecream: Bananas and Vanilla Extract
