Foodie Friday: Nooch Coated Tofuย

My favorite lunch/dinner: Nooch Crusted Tofu.

(Nooch is Nutritional Yeast, it naturally has a cheesy and buttery flavor.)

Spray Braggs amino acids on extra firm Tofu. 

Coat the Tofu with nooch.

Pan fry with vegan butter. 

Put on a whole wheat bun. I like to add veganaise to mine! 

And that’s it!

โญ๏ธLunch: Sonoma “Chicken” Salad (the “chicken” is tofu!) from the Happy Herbivore‘s Light and Lean Cookbook.

๐Ÿ’›Dinner: Lentil Joes from the Happy Herbivore‘s Light and Lean Cookbook, in a Whole Wheat Vegan Pita with Fresh Mango and Steamed Veggies.

โญ๏ธDessert: Skinny Vanilla Cupcake with Fluffy Buttercream Icing (from last week’s Recipe Review Thursday) and Fresh Raspberries.

Vegan GF Raw Omega-3 Rich “Meat” Tacos

๐ŸŒŸToday I have a taco recipe that is super yummy and super satisfying! The “meat” will have you taking a doubletake๐Ÿ˜ฑ, but I promise it’s raw ๐Ÿ’šand vegan!๐Ÿ‘

  

Raw Vegan Omega-3 Rich 'Meat' Tacos

  • Servings: 1
  • Difficulty: Easy

“Taco shell”:

  • 3-4 Leafy Romaine* or Butter Lettuce Leaves

“Meat”:**

  • 1 t Pumpkin Seeds
  • 1 t Seasame Seeds
  • 1 t Hemp Hearts
  • 1 t Chia Seeds
  • 1 t Flax Meal
  • 1 T Soy Sauce
  • 1/2-1/4 t Chili Powder
  • 1/2-1/4 t Paprika
  • 1/2 t Cumin
  • 1/8 t Chipotle Powder
  • Dash of salt

*Happy Healthy Hint: Romaine Lettuce is packed with protein!

**Double, triple, or quadruple the recipe for more than one person!

    Toppings:**

    • 1/4 Avocado
    • 2 T Chopped Tomatoes
    • 2 T Chopped Green Onions or White Onions
    • 2 T Sliced Black Olives
    • 1/2 Lime
    • Cilantro 

    *Instead of these, you can use salsa or guacamole

    How To Make It?

    1. Put everything except the lettuce into a food processor. Process until looks like taco meat.
    2. Spoon the mixture onto each lettuce leaf.
    3. Top with avocado and salsa or chopped tomatoes, chopped onions, and a squeeze of lime. Enjoy!

    Optional: Add your favorite hot sauce! (Mine is Tabasco sauce–vinegar+peppers! Simple with just a dash of heat!)

    ๐ŸMy favorite vegan fruit smoothie bowl that I have made so far! It’s perfectly sweet, delightfully satisfying, and super refreshing for a hot summer day~โ˜€๏ธ

    ๐Ÿ‡Smoothie: avocado, spinach, orange, carrots, apple, raspberries, and vanilla flavored vegan protein powder*.

    *I use Bio Chem 100% Vegan Protein Powder

    ๐ŸToppings: fresh pineapple, black seedless grapes, apple slices, strawberries, flaxseed meal, and chia seeds.

     โœจVeggie Party Smoothie Bowl!๐ŸŽˆ

    ๐ŸŽ‡This is a veggie party in your mouth! It has a complex flavor that is fresh, super filling, and nice and refreshing!๐ŸŒŸ

    ๐ŸŽ‰Smoothie: coconut water, spirulina, spinach, mixed greens, frozen broccoli, lime juice, orange, and baby carrots.

    ๐ŸŽŠToppings: mini sweet bell peppers, sugar snap peas, baby carrots, cucumber, celery, cilantro, and hemp hearts*.

    *I use Mantitoba Harvest Hemp Hearts (Food Fact: Hemp hearts are super high in protein! 3โƒฃ TBSP has 1โƒฃ0โƒฃg!)

    โ˜‘๏ธCalories: 2โƒฃ7โƒฃ8โƒฃ

    โœ”๏ธNext time: Iโ€™d like to add ginger and maybe forgo the coconut water (or use less) because it was a little too watery!
