I’m back!

After a year long hiatus, I’m back! Back to being vegan and back to blogging!

Earlier this year was my last year of college and I got super derailed. I stopped eating vegan, started eating bad foods again, and gained 40 pounds!

So, join me on my health journey! I want to get back to the me last year, and maybe you can gain something too!

💛Dessert: Vanilla Nicecream with The Date Lady Caramel Sauce, Cacao Nibs, Coconut Flakes, and Carob Powder.

⭐️Breakfast: Choco PB Overnight Oats Pancakes with Peanut Butter Sauce. 

  • Use the recipe for my 3 Ingredient Overnight Oats Pancakes. (Just add cacao powder to the batter, and the Peanut Buttet Sauce is just 1T powdered peanut butter water, stirring until slightly runny!)

💛Snack: Homemade Peppermint Mocha Frappachino with Homemade Coconut Milk.

  • Homemade Coconut Milk: Just 1 Cup Coconut Flakes + 3 Cups Water in your Vitamix!)

⭐️Dinner: Vegan Peanut Noodles Soba with Tofu! (Recipe coming soon!)

💛Really late lunch: Salad with Mixed Greens, Cucumber, Peaches, Avocado, and Salsa as dressing. 

⭐️Dessert: Skinny Vanilla Cupcake with Fluffy Buttercream Icing and Fresh Raspberries. (Recipe from the week before last’s Review Thursday.)

👉Happy Healthy Hint: Don’t❌ focus on how much protein❌ you get with each meal! (You’re probably getting enough!) Instead focus on getting all the Nutrients you possibly can!

Ask yourself: 

  • Can I add more Veggies to my plates? Can I still add more Veggies?
  • How can I add Beans, Nuts, or Seeds?
  • Can I add any Fruit to my plate?

Most importantly: make the Veggies the star⭐️ of your plate!

⭐️Lunch: Sonoma “Chicken” Salad (the “chicken” is tofu!) from the Happy Herbivore‘s Light and Lean Cookbook.

💛Dinner: Lentil Joes from the Happy Herbivore‘s Light and Lean Cookbook, in a Whole Wheat Vegan Pita with Fresh Mango and Steamed Veggies.

⭐️Dessert: Skinny Vanilla Cupcake with Fluffy Buttercream Icing (from last week’s Recipe Review Thursday) and Fresh Raspberries.

💛Snack: HappyHealthyPopcorn with Salt!

  • 👉✨Happy Healthy Hint✨: Did you notice I ate: 3⃣ meals and 3⃣ snacks? That’s the magic formula!
  • 👍Plus, if you’re eating a Plant Based and Nutrient Dense Diet (that is free of refined sugar❌, processed foods❌, or unhealthy fats❌) then you don’t even have to count calories!
  • 💛It’s actually pretty easy to be healthy isn’t it?😊
