βοΈLunch: Sonoma “Chicken” Salad (the “chicken” is tofu!) from the Happy Herbivore‘s Light and Lean Cookbook.
πDinner: Lentil Joes from the Happy Herbivore‘s Light and Lean Cookbook, in a Whole Wheat Vegan Pita with Fresh Mango and Steamed Veggies.
βοΈDessert: Skinny Vanilla Cupcake with Fluffy Buttercream Icing (from last week’s Recipe Review Thursday) and Fresh Raspberries.
πSnack: HappyHealthyPopcorn with Salt!
